Hate to say it but everything you said sounds normal for a 3.6 jk. Above 200 Coolant explodes out the radiator with the cap off. That is normal when burping. 3/4 on the temp gauge in the mountains trying to keep up with traffic is normal as well. It's nearly impossible to fill the Cruze's coolant and get all the air bubbles out so they work their way out as you drive.
