The advantage of the Steam installer is that it will update your install of SWTOR any time you have Steam open and there's an update. If you have the normal install you won't get the update until you log in to the launcher. If you ever want to pay for sub time or CCs with your Steam wallet, you'll only have that option with the Steam install.
Literally the only difference is that instead of opening the SWTOR launcher directly you can open it though Steam now. Everything else - the assets, the servers are all the same. In fact with Steam running in the background, technically performance would theoretically be worse than if you were just running SWTOR. 2.
